Lemon Tahini Dressing

Packed with fresh garlic, ginger, and turmeric, this creamy dressing packs a serious punch.  Plenty of lemon makes it the perfect partner for hardier greens like kale. 


2 medium lemons
3 cloves of garlic, peeled
1 inch piece of turmeric root
1 inch piece of ginger root, peeled
2 T. olive oil
2 T. + 1 tsp. tahini (sesame paste), well-stirred
¼ tsp. sea salt

What you’ll need:

Citrus Juicer
Empty jam/Mason jar
Measuring spoon


  1. With microplane, zest lemons; set fruit aside.  Grate garlic, turmeric, and ginger with microplane.  Work directly over jar.
  2. Cut lemons in half and extract juice using citrus juicer.  Look out for seeds.  Add juice to jar.
  3. Add olive oil, tahini, and sea salt to jar.
  4. Shake well to combine.
  5. Serves 4.
