Before you read any further, I’m going to ask you to sit down, as the information I’m about to drop is a total game-changer.  Did you know that the defining characteristic of sushi isn’t raw fish, but rather vinegared rice?  Stop the presses!

That being said, I want to offer you full permission to go ahead and mix up whatever your heart desires in these surprisingly easy to make rolls – including prepared beef products!  Whether you’re into corned beef, beef jerky, summer sausage, or salami, there’s a Beefshi recipe that’s sure to float your boat.  If you’re reading this and feeling skeptical, rest assured that each Beefshi recipe was developed by a CIA trained chef.

I’m a big fan of utilizing the deli counter for quick, convenient sources of zinc and iron - especially during the summer season when I don’t want to turn the oven on – and items such as roast beef work just as easily in Beefshi as they do in a sandwich.  But for the sake of transparency, I’ll divulge that 2020 has been my personal year of the all-beef hot dog.

Some view the hot dog as the quintessential ballgame, cookout, or here in New York, curbside food choice.  I say, why limit the joy of the wiener to just a handful of occasions?  Isn’t it time we rethink the dog, highlight its versatility, and recognize it as the original sustainable food?

The answer, in this dietitian’s opinion, is a resounding YES.  When I look at a beef hot dog, I see the perfect vehicle for a variety of other nutrient-dense foods and an opportunity to pair the familiar with the unknown.  This Spicy Wiener Roll is a prime example: the much-beloved beef hot dog is nestled into sushi rice instead of a bun.  Spicy kimchi replaces another good old cabbage standby (sauerkraut), and avocado lends creaminess and smooth contrast.  I don’t want to court controversy, but if you like a little ketchup with your wiener, the spicy dipping sauce offers just the right amount of sweetness.

Spicy Wiener Roll

Created by: Nicole Rodriguez, RDN, NASM-CPT

 Serves 2

 Ingredients:

-2 nori sheets

-1 cup prepared sushi rice (follow this recipe or grab some from your local sushi spot!)

-2 beef hot dogs, bun length

-1/4 cup kimchi, finely chopped with scissors

-1/4 cup avocado sliced thin

 For the sauce:

2 T. each ketchup, mayonnaise, and sambal oelek (ground chili paste)

Preparation:

Cook hot dogs on the grill or in a pan on the stovetop until crispy on the outside.  Split down the middle lengthwise, taking care to keep each hot dog in one piece.  Set aside.

Lay a sheet of nori on a clean sushi rolling mat.  Use wet hands to spread half the prepared rice across the nori, leaving about an inch of space at the edges.  Next, nestle avocado across the rice.  Top with hot dog, cut-side down.  Lay kimchi across the seam of the hot dog.

Slowly begin to roll the mat over the ingredients, utilizing thumbs to tuck in the ends.  Continue pressing and rolling until the edges come together.

Run a sharp, non-serrated knife under cold water and begin the slice the roll.  Immerse the knife in running water between each slice.

Repeat with second nori sheet and remaining ingredients.

Combine sauce ingredients in squeeze bottle and garnish rolls.  Alternatively, serve sauce to dip.

Serve immediately and enjoy!
