Easy Green Koji Safari Popsicles
Parrots and elephants and monkeys - oh my! Koji Safari Popsicles bring the animal kingdom to your freezer, complete with a tour guide. Transform three ingredients into a kid-friendly popsicle that's big on natural sweetness and vitamin C.

If you've been following along here at Enjoy Food Enjoy Life this summer, you may have noticed the author's obsession with popsicles. Whether sweet, spicy, boozy, or kid-friendly, what's not to love about a homemade frozen treat? One thing: the mess left behind by a toddler running amuck with an adult-sized popsicle. Koji has thankfully remedied the situation.
The Koji Safari Popsicle Mold is literally the most user-friendly popsicle mold I've tried to date. Crafted from BPA-free silicon, each of the 2 oz. capacity molds is shaped like an animal or charming safari guide. But the "OMG that is so freaking cute" -ness doesn't end there: each reusable stick is shaped to match one of the characters.
While the molds can easily serve as a vehicle for juice, pre-blended smoothie mix, or even chocolate, they provide a great opportunity to get some greens into your little ones. The trick to making popsicles that taste like a treat and not a salad? Same as with a green drink: pair those leaves with some fruit. Here, I blended fresh spinach with kiwi (an oft-overlooked nutritional powerhouse) and canned pineapple chunks. Look for the kind that are packed in their own juice - not syrup. The result? Pleasantly-sweet popsicles that are just the right size for little hands.
What impressed me most about this product is how easily the popsicles release from the mold itself. There's no need to run the mold under water - simply pull the reusable sticks, and the popsicles literally POP out of the mold, completely intact (and adorable).
While the Koji Safari Popsicle mold was likely crafted with children in mind, it also has a place in your freezer if portion control is a concern. If you're going to relegate yourself to a small treat, it might as well be shaped like a parrot, right? Get yours here.

Easy Green Koji Safari Popsicles

Special Equipment: high-power blender, Koji Safari Popsicle Mold
Ingredients:
1 C. fresh baby spinach leaves, stems trimmed, tightly packed (I used Dole)
1/2 C. canned pineapple chunks, drained of juice
1 kiwi, peeled and quartered
Instructions:
Combine all ingredients in blender. (I used the single-serve attachment of the Ninja).
Divide mixture evenly into popsicle molds. Insert corresponding stick into each mold.
Place in freezer overnight, at least 8 hours. Remove popsicles from mold when ready to serve.
