Packed with fresh garlic, ginger, and turmeric, this creamy dressing packs a serious punch. Plenty of lemon makes it the perfect partner for hardier greens like kale.
2 medium lemons
3 cloves of garlic, peeled
1 inch piece of turmeric root
1 inch piece of ginger root, peeled
2 T. olive oil
2 T. + 1 tsp. tahini (sesame paste), well-stirred
¼ tsp. sea salt
What you’ll need:
Empty jam/Mason jar
- With microplane, zest lemons; set fruit aside. Grate garlic, turmeric, and ginger with microplane. Work directly over jar.
- Cut lemons in half and extract juice using citrus juicer. Look out for seeds. Add juice to jar.
- Add olive oil, tahini, and sea salt to jar.
- Shake well to combine.
- Serves 4.
